Corn Chowder

3 corn cobs ( boiled for 8 or until tender and then cut of cob) substitute: 3 small cans of corn
1/2 package of cream cheese
1 Cup of milk
2 Cups of chicken stock or vegetable stock
1/2 lb. green beans (cut into thirds)
3 cloves of garlic (crushed)
3 Tb. Extra virgin olive oil
5 sprigs of thyme
Flat leaf parsley
2 tsp. dried shallots
1/4 stick of butter
1 tsp. salt and more to taste
1 tsp. fresh black pepper
1 tsp. red pepper flakes
1 small pinch of white pepper

Mix all ingredients together in large skillet on med heat, stir occasionally. Keep eye on it, since it should not come to a boil. Once it is close to a boil let simmer and stir occasionally. Once 1/16 of it has evaporated and green beans are tender (about 45 minutes) add 1/4 cup flour and whisk in rapidly, to avoid clumps.

I really enjoy this soup just as it is, others might recommend adding chicken, but I would say see what you think first. Serve with crackers and enjoy the benefits of this bountiful earth!

Chanterelle Quiche A Summer Treat!

Chanterelle Bacon Quiche
1/2 Ib. mixed mushrooms, Chanterelle (sliced thin) and Portobello (sliced thick)
6 strips of bacon, crispy and chopped roughly
1 small zucchini, sliced into rounds and quartered
3 cloves of Fresh garlic (2 of regular), diced fine and made into a paste
1 small onion diced

6 eggs
1/2 C. cream
1/2 tsp sea salt
1/2 tsp pepper
1 Tbs Fresh parsley chopped roughly
1 Tbs Fresh lemon thyme ( don't have it, use regular thyme and zest of only 1/4 lemon)
1/2 tsp chili garlic sauce

Pre-heat oven to 400ºF.

Cook bacon in a sauce pan at a medium to medium high heat, let it crisp. Remove bacon and leave fat in pan. Sautee garlic, onion and zucchini in bacon fat! No wonder it is so good!

In a medium size bowl mix eggs, cream, salt, pepper, parsley, thyme chili garlic paste.

Once onions are transparent take off heat and let cool. Mix with egg mixture and place in Quiche crust. Bake for 30-45 minutes. If omitting crust bake time changes to 20-45 minutes.

Middle should still jiggle a wee bit.
